Well. crap....I was going to feed Felix....but I realized I hadn't seen him in a couple of days...so before I thawed out pinkies for him , I went digging for him....and he was dead.

I lost both my baby snakes. Bummer.

Yeah....I've got cactus tacos to make....I picked up a rack of St. Louis ribs....(if you don't grill on the 4th here....they take away your man card, your Texan card, and your family jewels.

Anyway....just for giggles, I YouTube searched how to make these ribs....(I always like as much info as possible fresh in my head BEFORE I approach these endeavors) ....well, it took over an hour to view an 8 min. video.....I have to make 6-7 attempts just to load pics.....

Yeah...Felix was a baby...only ate once and shed once....maybe 10" long...Oscar is around 5' long and been with me close to 15years....give or take....

Need to get some food for her as well....(and Vin Diesel) this weekend....Of course...Vin...(my red-eared slider) would be perfectly happy plucking dried shrimp out of my fingers forever, but he's almost out of quality turtle food.

EDIT: And I think it's been close to a month since I fed Oscar.

Wow those things can go a long time without eating... Hey Doug, do you use any whiskey or something for marinating steaks or something on the grille? Couple years ago, I was thinking on trying #7 Jack Daniels for ribeye but decided against it.

Whiskey is for drinkin. BBQ sauce is for cookin. lol
I use a Jack Daniels brand BBQ sauce.

Just saw a cooking show where they marinated King Salmon in Scotch, then solid brined...(like a buried rub) and cold smoked it.

The problem with alcohol and brining steaks is that the alcohol tends to pull moisture out of the steak....not something you want...

If you want to marinate stick with Worcestershire, oil, vinegar, liquid smoke, and Lawry's seasoned salt....or one of the packaged marinating mixes.

If you absolutely want to use alcohol....use a red wine and marinate for at least two days...but I'd save that kind of stuff for a roast.

One thing I always did was take two forks and turn them back to back and alternate stabbing the steak with each one until it was totally punctured before marinating.

Marinate overnight...and you'll have a steak that practically falls apart....(but is still juicy....providing you don't overcook it.)

Oh...and a pat of butter on top after you cook the first side never hurts either!

Yeah normally I'd use Worcestershire sauce, but I hate the taste and smell of it, unless it does cook out. Never knew that it could dry it out. Thanks for the tip!

Well...the funny thing is...that I use a bread loaf pan with a beer and water near the firebox on my offset smoker....and the beer helps moisturize the smoking chamber...but directly applied to the meat...it drys it out.

(We've all heard of beer can chicken, right?) But that steams it from the inside...and the alcohol content is low....it's not drawing out surface moisture.

You won't taste the Worcestershire at all...(and you only need a tablespoon in the marinade)...(at the most)...you may not realize it...but it's crucial in cockail sauce...(catsup, lemon juice, horseradish and just a few drops of Worcestershire)....without it...cocktail sauce is just not right.

I got ribs on the smoker...HOT out there, tho....

They said on the radio: It's hot....it's dry....the wind is blowing....it's fireworks season.....what could go wrong?

Well I learned a very valuable lesson... DETACH THE *BLEEP* PARK BRAKE CABLE TO REMOVE A *BLEEP* CAB! I took my '92 Dakota and tried to yank the cab off the R2D21 sideways with a logging chain... it flipped the truck on it's side and pulled it behind me... ALL BECAUSE OF ONE LIL' NUB HOLDING THE E BRAKE CABLE TO THE TRANSFER CASE!

What the H.E double happen? You tried pulling the cab off your Dakota and left the e-brake hooked up to the cab and it ended up on its side? That's one strong freakin' cable.

No. FINALLY ripped the cab off a D21 I have to turn it into a sand rail. E brake cable is routed from the dash, under the tunnel and held in line by the stupid lil' conduit straps...

Put it this way... I came to a near dead stop at 15mph before the victim flipped on it's side...

Ribs came out pretty awesome....now working on the cactus tacos...they're coming along nicely....just need a lot of simmering before I add the refried beans and meat.

Decided to add vinegar...(not necessary...but more closely minicks the canned nopalitos I normally use for this...) (I use fresh just for the vegetable dish, normally.)

It's also Mustang grape jelly time again....
