You certainly don't need to pull the engine apart. Everything can be done by just removing the rocker cover. You didn't say what brand of rockers you purchased, but if you go to the " Gage " website ( the company that manufacturers the best, and also the most expensive roller rockers ) they have...

Gage rockers are probably the best, but I think that you'll be happy with the ones from N R Racing. They have pretty good stuff.

Didn't the Amazon CVT you bought come with a plate. The plate that bolts to the engine. It has a perfectly good 5/8" jack shaft in it that fits the driven clutch. Use it and eliminate the 3/4" shaft that's on your kart. You seem to be trying to make this much harder than necessary.
