Not a very strong motor for a 500-600lb kart with rider. What are your top speed goals? Acceleration? Hill climbing ability? If that is the motor you go with than those 20ah lipos probably would be enough.

You are going to need a huge amount of battery power to move all of that kart. Those 4ah packs likely top out at 25-30 amps max before the BMS protects the cells (if there is a BMS) so 180 amps max, less continuous. I know you said it’s a test setup but the weight of your vehicle ready to run...

22.2v is nominal for 6s lithium. You may be thinking of Lifepo4 which is less. I'm going with four 6s packs in series which is 24s, likely 3 set of that in parallel. Charged to 4v per cell is 96v max, 88.8v nominal. I charge to 4.1v but that's not a huge difference.
