take the old motor out... maybe start working on a shifter lever. and clutch pedal (assuming its manual)

then once you get the caliper and everyhting else you can make brackets or cut them off the bike and drill motor mounts.

also need to figure out how ur gonna mount the tank.

What kind of frame do you have? If it's small, you could sit next to it, rotate the shifter arm up, and fab a longer arm. I bought a motor like this from a kart, the seat was to the right (when looking at the front) and the motor on the left. The shifter arm was extended upward with 1" OD pipe and the bike's twist throttle was on the shifter arm. So drive with your left hand, throttle and shift with your right, clutch with your left foot and brake with your right. Interesting, but practical.

So you only had one hand on the steering wheel? Dosent sound to practical to me...

You don't understand the guy I bought it from, it was a rough part of town, he was looking BA and revving it high in neutral. As long as full lock is less than about half a turn, it should be do-able.

Could you make a suicide shifter with a hand clutch? So that you gas with a foot pedal then let off and clutch and shift with some type of linkage? Like this (but moved up by the driver, not back on the motor):

i would make 3 pedals, (clutch, gas, brake) and a lever that is just a solid bar you push up and down.
