So i have recently purchased a predator 212 engine for an old off road go-kart. At first it was running great and had no problems until I went through a couple shallow water puddles. Since then It has been idling with the choke closed as if it were opened but as soon as I open the choke to start riding, it stalls out. I have taken the carb apart and sprayed inside and out the main jet and the plastic jet located under the idle adjustment screw with carb cleaner. And it is still having the same issues. Please let me know if I have forgotten or skipped a step.

P.s. I have also recently added in fuel injector cleaner and changed the oil.

Welcome!! It sounds like it is starved for fuel. Try emptying the gas tank and giving it a good clean (incl. the fuel line).

Check for leaks around the intake.
Spray some starting fluid around the gaskets (avoiding the filter side) while its running and listen for a change in RPM.

I owe a HUGE thanks to ezcome-ezgo. I was cleaning out the gas tank along with the fuel line checking for any reason for fuel blockage. I tried cleaning the fuel line by spraying carb cleaner into one end of it and it did not come out the other side, infact it came spraying back out the end I had sprayed into. I tried pulling out the fuel line to find out it was stuck. Turns out that it had been pinched between the pull start cover and the crank case and no fluid what so ever could go through the line. Thank you! I you have resolved my problem!
