Yes, always a packer! I can't believe the folks that smoke a flat, and wonder why it's tough and dry.LOOKS AWESOME! Life does look good.

As for your wood, I personally can't stand mesquite for anything besides a quick chicken. I'm just not a mesquite smoke lover. Everyone's different.
Looks awesome though! I haven't yet smoked a choice brisket rather than a packer, but it's supposed to up your game immensely. (That, and drain your wallet immensely!) I always do packer and take my time.
Well I thought I meant choice. But maybe prime. Are there prime briskets? Whatever the more expensive one is at HEB, it's at least double the cost of the "normal" one.
I thought "packer" meant select grade, but I just read that it's the cut, not the grade. I swear, there's so many things just about butchering it's hard to keep my head straight!

the brisket is actually two different cuts. The flat, and the point, or as others call it, the deckel.
Afaic, a bbq joint should serve you some of the lean (flat) and some of the point (tender and marbled) along with a bit of the burnt end, and a nice slice of fat.
I never served it sauced at the r, so people could first taste the meaty wonderfulness, then if they wanted they could do what they wanted, except ask for mayo or cheese.![]()
there's three commercial grades of beef. Select, choice, and prime.
Most of what you are offered in the grocery stores is choice. A large portion of the prime goes to restaurants, and the select ends up in the low end like fast food joints.
