There's a 12 lb packer cut brisket smoking over mesquite in your backyard!

Sometimes I wish I was on the southern part of the United States. May have just missed a chance to go to Texas even. Sherman to be exact. Then I could BBQ year round. I'm sure you could come close here, but if its close to 0f I'm gonna use the stove.

As for your wood, I personally can't stand mesquite for anything besides a quick chicken. I'm just not a mesquite smoke lover. Everyone's different.

Looks awesome though! I haven't yet smoked a choice brisket rather than a packer, but it's supposed to up your game immensely. (That, and drain your wallet immensely!) I always do packer and take my time.

Yes, always a packer! I can't believe the folks that smoke a flat, and wonder why it's tough and dry.
I didn't do too bad here. @2.99 lb. I used to get them cheaper when I owned the R. But considering steak is so high these days, the brisket is still a good value, and we'll be eating it for at least a week.

Being that mesquite is abundant here, we smoke with mesquite.
If hickory was growing in my back yard, well...yeah.

Did you mean choice, or did you mean prime?

I thought "packer" meant select grade, but I just read that it's the cut, not the grade. I swear, there's so many things just about butchering it's hard to keep my head straight!

And yes! You go to a BBQ joint, and you want "MOIST!" ;)

The brisket is actually two different cuts. The Flat, and the point, or as others call it, the deckel.

AfaIC, a bbq joint should serve you some of the lean (flat) and some of the point (tender and marbled) along with a bit of the burnt end, and a nice slice of fat.

I never served it sauced at the R, so people could first taste the meaty wonderfulness, then if they wanted they could do what they wanted, except ask for mayo or cheese. :mad:

There's three commercial grades of beef. Select, choice, and prime.
Most of what you are offered in the grocery stores is choice. A large portion of the Prime goes to restaurants, and the select ends up in the low end like fast food joints.
