if a new carb fixes it, then you've isolated the problem to your existing carb, which is not all that hard to fix. The best way solve a problem is one step at a time. Try the wires first, then if that does not work, clean the carb, if that does not work, check for air leaks... When you repair concurrently, you deprive yourself the ability of isolating the problem.
I think that you have an ignition grounding issue, which is the same as the low oil sensor issue - momentary false grounds. The symptons are similar, but the "root cause" is slightly different.
1.enging cuts out over rough terrain -> ignition is being grounded -> LOS momentarily engaging due to oil splashing around from bumps
2. enging cuts out over rough terrain -> ignition is being grounded -> LOS not present -> loose wire momentarily grounding to engine from bumps
