I'm hungry already!
But, it ALSO means Alaskan crab!

Haven't tried elk hunting, I'd have to go out west for that and they charge a lot for out of state licenses. This year I'm taking a lot of pics if I get one. I missed the doe lottery, because I wasn't expecting being able to go hunting until next year. 15 years ago it was you could get 2 buck or 1 doe on a license, but they've changed it to being a lottery for doe (only a thousand i think for the whole state) and only 1 buck per person.

Mmmm....rat jambalaya! But here on the Bayou, we use nutria, less work to dress out a meals worth.

I hear swamp rat is alright....Most are basically free range....Im more of a gumbo fan myself... but all southern food is pretty darn good......
Hard to get gator and frog legs here aswell...

Something else that is really good is freshwater eel. It shares a trait with gator, in that nearly every bite is different.

They say turtle has 8 different kinds of meat, but other than tenderness, they all taste the same to me.( Maybe because I haven't eaten one of those huge alligator snapping turtle. )

Every time I hear someone mention frog legs, I get a little sick. That's like shooting a deer, throwing away the carcass and eating the back legs! Frogs have backstraps too! In fact, the toughest, driest, WORST part of the frog is the back legs. (People just eat them because they're easy to eat.)

Crockpot brisket slow cooked with beer, onions and chili sauce with mashed potatos and garlic bread. Complete immobilization afterwards so have the wood in.
