throttle control

hi all new to the karting scene.
I am building a kart for my son.got the traditional standard tkm style go kart frame ,steering ,seat ,axle ,brakes.
but going for a 36v electric motor(so not to annoy any one near car parks).
my question is what is the best way/part to use as a accelarater pedal to give progressive acceleration.
any advice welcome

The sticky is good for basics but doesnt really give you any examples.

I used this one and engineered the the stock kart pedal to actuate it.

An inclination sensor mated to the stock pedal would be an awesome (maybe expensive) solution.

I was thinking of 36v drill resistor or a sowing machine pedal

I used the Curtis PB-6 0-5k ohm throttle pot http://www.evdrives.com/product_p/thr-pb6.htm with an Alltrax controller. I adapted the existing throttle linkage to actuate the throttle pot.
