A bike shop will have a "Cable Adjuster" end. You can just clamp it down with an versized washer. Just don't screw it down too tight.

I use bicycle brake cables for throttle cables all the time. You can buy brass fittings at any local hardware store that are designed for 1/8" tubing (plastic, steel, copper, etc), the kind that come with a ferrule. If you take a utility knife and cut the plastic housing off of the brake cable (1/2" from the end, roughly) you will see a steel core underneath it. This steel core fits in the ferrule perfectly, it can be tightened down pretty snug without crushing the cable and holds well. If needed, I can post pictures for you. Also, the above mentioned brake cable adjuster is a great idea too! It makes adjustments quick and easy if the throttle cable ever stretches.

That's good idea!

I often make my own. This involves selecting a low-grade (2 or less) bolt, maybe 1/4-20x1". Using a drill press, I drill a 1/8" hole right through it, down the middle. I then use a 1/4" bit to drill a recess into the head for the cable casing to fit in. From there, you can either drill and tap a bracket to 1/4-20, or weld a 1/4-20 nut to your bracket. You can use an additional nut to lock the adjustment down.
