I know this is old, but I'm always looking for places to ride, maybe this will help somebody.
A friend of mine had some luck driving his karts & dirt bikes on some unused beaches in Tom's River. You could also try some biking paths - I'm lucky enough to have a 7 mile path run right past my house, so I take the kart out at night during the summer months.
Just keep in mind all of that is probably illegal.
