You know....I can only speak for my little part of the world....but around here most people think a banana ought to have a flawless yellow skin. and a perfect firm white flesh.....

They don't realize....that that is like eating a raw potato....

A banana isn't ripe and ready to eat until the skin is at least 1/2black, the flesh is mushy and turning brown....

Simple proof....smell the two.....every wonder why banana candy tastes so good....but so different than fresh bananas?????

Try eating a black skinned banana......

I get where you're coming from (banana bread is the same way) but on the rare occasion I do eat a banana it's because it's convenient, not because of the flavor.

On the other hand, I'll take a peach or a kiwi any day :D

I have to say something here....

BANANA CANDY HAS NEVER TASTED GOOD!!!

Also im allergic to bananas, so this doesn't pertain to me.

well that's half the truth unfortunately..

first.. the banana "taste" of candy is the taste of a species called "Gros Michel" and that is NOT around anymore (extinct since the 1960s or something google 'panama disease' ;))..
what you can buy at the stores is a "Cavendish" a sterile mutant of a banana.. seedless, almost tasteless.

A ripe banana is YELLOW, or at least as far as nature meant it to be.
Nowadays most of us do not come in contact with a ripe banana ever...

I once had the pleasure to pick a ripe yellow banana off a tree (in the domenican republic some 20yrs ago)
ever since I get sad whenever I eat one :(

yes they turn yellow in riping chambers.. but they do not develop anything close to their full potential tastewise.

it get's better when it starts to turn brown I admit, but that's because when it does.. it likely had some additional sunlight,
still nothing compared to a yellow banana from a tree :(


So, no.. a "ripe banana" is yellow, but it had the chance to turn yellow on a tree.
a brownish banana is closer to the taste of such ripe banana than a greenish yellow banana in the stores.. but again...
but again, that's like saying a Rupp A Bone is closer to a Dodge Challenger than a Manco AmEx :(

We like our bananas almost green. Yellow with even one or two tiny spots is over ripe. Never had banana candy either, but did you know that artificial Vanilla candy flavor actually comes from a gland near the anus of a beaver! no joke. you can google it.
Doug don't even go there, I know what you're thinking! LOL

Technically, what you are saying is totally correct.

Unfortunately, I am referring to supermarket bananas....which are picked unripe....as they get close to rotting....they develop a much better flavor....

They are still unripe when they turn yellow....(they were picked green)....and there is actually little difference in the taste compared to the point where the skin starts getting black....

Unlike old fashioned sweet corn....which had to be eaten quickly, because the natural sugars turned into starch....modern grocery store bananas start starchy and convert to a higher sugar level as they age....

(Nowadays sweet corns are mainly SE or SH2 varieties that hold their sugar content much longer....but it comes at the expense of texture....the kernels stay much crispier and are more watery than the old fashioned varieties.)

But....that's why we garden....the taste of old fashioned fruits and vegetables , picked at the peak of ripeness.....and on the table in minutes...just can't be duplicated in a grocery store....

I guess the best anology I can make for that is green peas....if you've ever eaten frozen peas.....and canned peas....you know the difference in taste.....you just can't get frozen pea taste from a can.....

Well, the same holds true....even in the fresh state....with a lot of garden veggies....you would not believe the flavor and sweetness of fresh picked beets....

Sadly, it's a bit too cold here to grow bananas....but....there's no reason not to make the most of what we have to deal with.....

That's an urban myth actually..

it's much cheaper to destill vanillin (the vanilla 'taste') from wood chips... or more precisely lignin or guaiacol
a byproduct of the paper industry.

still crap IYAM ;)

I normally eat 2 a day. I try and keep this many on hand. The ones on the left are to perfection for me. Sometimes i will eat them like the ones on the right too but not as often.

Then you know what I'm talking about.....they actually get better a little further along...people just get scared because they think they've gone bad....

I would encourage you to push the envelope just a bit further and check out how much better they get as they age just a bit more...

I like them closer to green, but still yellow.

Blackened bananas go in pancakes.

Mushy bananas don't taste right to me, it's a texture issue though.

Just to be clear...I'm talking about the peel...once the flesh goes past light brown....even I...(adventurous and fearless as I am).... don't eat them...

wait weren't you just talking about eating snails? and beaver (ok I like beaver too)
