Can a car stereo capacitor be used as a type of "NOS" for a DC motor? I'd like to have a capacitor wired to a momentary bump switch that could give our go-kart a boost when pressed. Is this feasible? What other ideas might work better?

No its voltage and output impedance is the same or worse than the battery. It would only help a little if the battery were a long wire run from the motor. You could use a boost converter to increase the charge voltage of a cap and dump a higher voltage into the motor for a short period, being careful to limit the time as to not overheat the motor.
