Need your wisdom again guys.... My kart had Kenda Polar Trac
15X5.00-6 rear tires, so I assume my rims are 6" ...
One is grossly worn out.
I would like to go a little bit wider... would it be wise to go with 15 X 6.00-6 on the rims I currently have? or would that be a problem?

I would also like to go taller, but it seems that 15 is the higher I can put on 6' rims and so not want to stress the clutch much...

Well......your question is only partially answerable for the following reasons:

OK.....So....#1: Generally speaking.....going an inch wider shouldn't be a problem.....HOWEVER.....you didn't list a rim width.....and no pics....so we don't know whether there are clearance issues......

And #2: Is going taller than 15" going to be a problem is completely unanswerable....without a complete disclosure of what you have.....

In my experience putting wider tire 15-6 on a narrower rim 6tall 5" wide. Causes the inflated size to be taller.
I have some 13x5x6 tires on 5.25 wide rims and inflated they are 12" tall
I also have 13x5x6 on 3.5" wide rims and inflated they are taller than 13"
Just my 2 cents.
Give us some more info. Is this a new kart or your Karter bros?, Are you going with the 420cc? what clutch and sprocket?

Ok, fair enough... No live axle n the kart, so it has the wheel connected to the sprocket (I do not how it is called) and the the other wheel that has no power transmitted to it.
The one without the sprocket has a 1 piece rim, that I was able to remove halfway with the 2 flat screwdriver method, and seems to be 5'1/4 wide from lip to lip.

The other one is a 2 piece rim that is driving me mad to remove from the tire and I do not know why.... I will try to spray some soapy water tomorrow and to see if I can get the tire off from each of the halves...

Both tires are exactly the same (only that one is badly worn out) and both are supposed to be tube-less, but something tells me that the one with the 2 piece rim has an inner tube that is not present on the other one.

So if I understand you correctly, it would not be much of a problem other than the final diameter of the wheel being slightly larger than what is supposed to.

One rim is 5.25, the other one is a 2 piece one that I have not been able to remove from the tire yet, but I assume it should be about the same.

This is still the Carter brothers (I believe is a Lightning model) that I'm finishing for the kids, while I look for a better frame of my own to play...
Clutch is centrifugal 10 teeth, with 72 teeth sprocket in #41 chain, fixed axle.
