we recently just upgraded out the 212cc with upgrades jets and and filter as well as custom header. we noticed that when we take it for a ride the engine revs up and the plateaus then speeds up. like it has a hick up as it climbs in speed and rpms. once the engine is at the max rpm it starts to settle and work as usual but the initial acceleration is just all choppy. what could be causing this. its not a smooth climb in mph.

What's the gear ratio and OD of tire size?....

it has a 10t jackshaft sprocket and 50t in the rear. the tire size 19x7-8

In which case it's quite obviously a jetting (setting) issue

check the spark plug color.. if it's dark you're running too rich,
if it's nearly white you're running too lean

stock jet is .028", causes it to run lean with performance mods.

aftermarket jet range from a size .033" to.038" in most applications for the 212cc and a stock carb.

Also, contrary to popular belief (and my erroneous belief from OMB warehouse's description) if you got an emulsion tube that is the "140 emulsion tube" the one with the big hole in the bottom, it causes the low end to be extremely rich often times over rich. I learned this from Jody at ARC racing on a video he put out.
