My valves on my ohv engine are poking out too much. They weren't before I took them out. Is there any way to seat them properly without grinding them? It seems pretty expensive.

Valves should not sit flush with combustion chamber surface. See attached.
Best way to check for leakage is with a thin oil such as transmission fluid. Pour fluid into intake port and look to see if it actually leaks past valve and seat. Check exhaust port in same manner. Check one at a time.
If they do leak and valve and seat are not obviously damaged, then something is warped (valve head and/or seat) or bent (valve stem).
If valves were simply removed and then put back together, nothing should change.

you could take the head off and spin them around to grind some of the carbon off.
i use diesel to check for leaks

As a last resort, you could put some valve grinding paste on them and turn them BY HAND, NOT WITH A DRILL! Then clean the hell out of the head and valves. It must be SUPER clean, or your engine will not last very long at all.

How can that be true modelengineer? You're basically saying to lap your valves or it'll shorten the life by a few years...

Thats not what he said.
Modelengineer is correct.
How long do you think your engine would last if you left valve grinding paste in there.

Ah whoops, I understood him the wrong way. Thanks for clearing that up Russ!

It actually turned out pretty good. The valves needed to be cleaned up, I just put them in upside down and worked them around for a bit. They don't leak at all anymore.

The basic rule for seating valves is to first ask, "Smoking or Non-Smoking?" and then seat them appropriately.
Hah! That's almost true! Smoking (exhaust), Non Smoking (intake).

Don't worry. I'm not quitting my day job, but I couldn't resist. Maybe chanting "Ohm.... Ooooooohmmm!" will help me resist. Get it? Resist? Ohm?

Okay really. I'm done. Sorry.
