Haven't put too many miles on it yet, Finished electrical and paint for the most part everything seems to be in good working order.

How do you stop people from stealing it? Is there some way that you have shut the engine off from anyone else using it? A key seems a bit useless as you could just bypass it

Who cares? Someone with a brain won't steal it because it isn't worth it and anyone who does steal it will be caught. I mean how hard is it to find a super long baby blue rear gas tank chopper?

Unfortunately people will steal anything nowadays. Even if they just strip the bike for the engine and dispose of the frame so that it is never found.

For now I'll use a disc brake lock for the front wheel. I was able to take it out yesterday for a few miles. Acceleration is very nice and that clutch is butter smooth. Anybody who has a equipment motor with a 1in shaft if they have the room, needs to get the clutch with the needle bearings in it. It makes all the difference in the world and is much quieter during operation.
