I'll give you coolest and most iconic on Bullitt. But for sheer mayhem and destruction I go Blues Brothers.

Blues Brothers really raised the bar for comedy as well as mass destruction in a car chase. They drove through a mall for cryin' out loud.

If you want to see the early evolution of chase scenes, check out It's a Mad Mad Mad Mad World. It set a new standard at the time for car chases. Pretty funny movie, too.
