Try going so slow RPM wise that you think your Social Security will kick in before you finish the hole. Then, you need to keep the cut zone as cool as possible.
Stainless steel's of all type's are defined by the chromium content they have; that means they have varied speed's at which they work harden (if they weren't already heat treated). If you don't know the grade and how to work with it, your best (and maybe only option) is to go as slow as possible.
You can also increase your chances by using some form of cooling agent; and while there are many excellent industrial products out there, if you find yourself needing to hand drill holes in stainless, say on a late Sunday afternoon, you could do a lot worse than a cheap spray bottle full of tap water. Yes, it rusts anything not stainless, but it's low boiling point means it works great for pulling heat out of your work zone.
I'm only familiar with maybe a half dozen of the more common types; there's so many specialty ones out there that it can be mind baffling.....
