SDcarting, you mentioned having a 1/16" gap. Thats's pretty close. I lightly seated mine, then evenly backed off a smitchin. That puts them pretty close. That gap is just a waste of pedal travel. On mine I have holes in the mounting bracket I made so I can adjust them in place. If you can't do that, I would get a piece of metal 3/16" or whatever your rotor thickness is and adjust them off the cart. Then slide the metal piece out and slide the caliper onto the rotor. I actually have to do that on my blue one.
