There is no "best," only "it depends on what you're going to do with it."
The rings and bore are effectively the only parts that have to wear together in these engines. If the piston isn't coming back out, then you could seat the rings whenever. There again, why have it apart twice? Just put it together the way you want it and run it then.
Yeah, I've seen some videos where people say "this is how you break in an engine" and basically just go balls out.Race engines don't get broken-in on stock parts. They don't get broken-in gently either.
