I'm thinking about my first ever go kart and I'm looking at which engine's here are my three I'm thinking predator 212 or tillotson 212 or ducar 212 which is the best for getting fully built naturally aspirated and then turbocharged and with a little shot of nitrous to help spool the turbo?

Forget about nitrous and turbochargers! You been watching too many Fat and Furryass movies. You can’t go wrong with any one of those engines if you are going to build a screamer. Do some research, look around and learn. And Welcome!

WAY WAY too many movies. There are a ton of hop up parts available for any of the engines you listed. Not that hard to double your horse power, or even more.
None of it requires turbo charging or nitros. Those are not practical or cost effective ways to modify a small displacement single cylinder engine.
