You are doing a great job. You are DEFINATELY going to have to get that 80T rear sprocket. Even with that you might struggle to take off and burn your clutch. With a large rear wheel like you have now, the 40T will burn your clutch in seconds, and you probably won't move. When you test it, don't test too much, otherwise you will be buying a new clutch
