The jalapenos sound delicious. My wife saw some really nice ones at the store and had to buy them, even though she doesn't eat them. She also brought home a bunch of cream cheese. I'll have to try this.

I made 110 pounds of bulk sausage this spring when we butchered a 500 pound boar. I stored it in zip bags at 2 pounds each. My favorite thing to do is take this right out of the freezer and put it on the grill frozen. 2 hours later, smoked sausage meatloaf.

forgot the most important part of the recipe
wrap a peice of bacon around the jalapino and secure with a toothpick....

I finally started building the second barbecue for my sister and brother in law. This one is coming along a lot faster than the first, and I'm avoiding a lot of poor design choices that were built into the first. I'll see if I can get some photos of it.

Here's the oven lying on its back. The door hinge is located just below the top centerline of the tank. You can see a little bit of the fire vent in the bottom.

On the first barbecue I welded the strips inside the doorway at the edge of the doorway, where the welds could interfere with the closing of the door. I thought I had enough room, but it creates a bit of a leak. On this one I welded them from the inside, on the edge farthest from the doorway, which you can see in the next photo.

Here's the bottom of the oven. The fire vent is cut out so I can stick my arm in and weld the door seals, which you can see inside the tank. The fire box is a propane tank that will be welded directly onto the oven tank, and the vent is smaller than the hole in the top of the fire box, which means that rather than dripping outside through a faulty weld, grease will drip inside, into the fire.

Here's the fire box, a regular sized propane tank used in gas grills, small forklifts, etc. I got it at the scrap yard for $5. I'm going to cut a door in it very much like the oven door, with an internally welded seal strip. Then it will be welded directly onto the bottom of the oven tank. I think I should also design a fire grate, inlet vent damper, and clean-out scheme before I weld everything together.

Reading this making me hungry ! always wanted to build one of these, this kind of BBQ cooking isn't really done in Australia, but I love slow cooking the smokier the better !
especially the "Buffalo Fart" recipe

What kinds of wood would you cook with in Australia? When I was a kid we had a bunch of eucalyptus after the trees froze unexpectedly. Eucalyptus chicken is delicious.
