I'm going to build a solar-powered go-kart and for that, I'll be using a 250watt motor with an 11 tooth sprocket on it and now I'm looking for a 55 tooth (#25) sprocket that fits on an axle but I can't find it anywhere can you help me?

There are a few on the internet. Motion Dynamics (in Australia) sells #25 sprockest in 55t, 65t, and 80t sizes for $21.99 + shipping. Right now 65 teeth are in stock, however the other two aren't. Not sure if they sell hubs, so you may end up making one. You will need to get both with the same mounting pattern.
Here's a link to the 55t sprocket:
https://www.motiondynamics.com.au/55t-wheel-sprocket-for-25-chain.html
Or you could convert the engine sprocket to a 12t #35 chain (if possible and affordable) and get a 60t sprocket. Both will give you the same drive ratio.

Simple reason for that:
you won't find sprockets in #25 that fit on a typical kart axle,
since they're not meant for that application (too flimsy to move a kart reliably)

You can get a bike sprocket of that size
here for example
https://electricscooterparts.com/sprockets25chain-wheel.html
(get the one for the freewheel hub)
And have a hub made
you can use a wheel hub
https://www.bmikarts.com/Galvanized...-Bolts-on-a-2-1316-Circle-1-Bore-_p_3211.html
for example..
and you'll only have to redrill four new holes (either in the sprocket or the hub as you like)
or a sprocket hub
like this:
https://www.bmikarts.com/Sprocket-Hub-4-Bolt-Circle-1-Bore_p_1397.html

same idea ;)

What's the shaft size??
If its a standard size shaft, yes not much problem.. You can get almost any sprocket with what ever size you need... You might need to get it bored for it however..
