The only way to line it up when you're more than 1/8" off is move the engine, or the sprocket you're trying to drive if it's an option.
As far as bolts, thread match the engine it should be common M8×30 iirc so 1.5 pitch I think that would be.

3/4" will hang 2 engine bolts off the the mount so i will need to make a adapter plate i was wondering if this is a common problem or not. thanks for the bolt size, i can fix it ...im in NE.tx 105° on my front porch now @1:40 in the evening so dont do much outside

If your working on a steel chassis there are several sources for an engine mount plate, so you could just cut off what would be in your way (or the whole thing) and zap a fresh one on where you need it. There are also CVT adapter risers that if I'm not mistaken also offset the engine, they are intended as a bolt on fix for some type of issue going from Cetrifugal to CVT can cause.
Check with BMI Karts, and OMB Warehouse

Idk if you weld but that would be my solution... TBH I'd attempt to just cut the welds off the original and scoot it over to zap it back on where it's needed.

The offset engine plates work like a champ. I have used them on two different
karts to fix the same problem. Go Power Sports or OMB Warehouse carry them.
I'm sure others as well. They let you move the engine at least 1" side to side and can be turned around so the movement can be in either direction.
FYI the bolts on the side cover of a predator engine, where you mount the clutch back plate are 5/16 x 24. The threads on the end of the crankshaft are also the same. I know it seems strange to have SAE bolts on a Chinese engine
Where everything else is metric but I have installed multiple torque converters and that is the size you need.

NGK for the win, temp range really depends on season and engine mods... based on most China equipped plugs including yours I'd say a B6ES for a stock engine that's not going to have the balls flogged out of it

Don't know what you mean by if I can find one with the brake built in. A sprocket is a single piece and has nothing to do with the brake. From your photos in post #1 & #11 it does look like your sprocket could be that small
( 27 teeth ) which is ridiculously small. You said kinda hard taking off, I can
image so. The gear ratio is way too tall. Once you get the right sprocket (60)
It will take off so much easier your motor might not move around. A lot of strain
with such a tall gear. Nothing wrong with your turn buckle idea, but it shouldn't be needed. Four bolts properly tightened with washers works fine on the 5 karts and 1 mini bike that I own. In post # 11 do you see how far your chain is hanging below the sprocket. Unless there is some weird angle and I'm not seeing what I think I'm seeing both the sprocket and chain are junk, worn out a long time ago. So when you order the new 60 tooth sprocket, order a new chain as well. It will need to be a good bit longer than the one on there now.
