want to build an electric cooler

So a guy at work has a motorized cooler and i go to looking at it and thinking that I could do way better. Its very small and has a 300w motor. So i picked up a much bigger cooler and now i need to decide on what to power it with. I like the possibility of either 1 or 2 1000watt motors. They have a 24v 900w kit for about the same price along with a 36v 1000w premium kit as well. Not sure what to go with. From what ive been reading i should go with the higher voltage motors. I am looking for torque not speed on this thing. I would like to be able to fill the cooler and even possibly have someone on the back. I would like to be able to drive it on grass and even some very light off road/trail use. Hence the idea that i might need the second motor. I would prob be using a live axle just not sure what size sprocket to use. I've got the cooler liner out right now and plan on putting an inner steel frame to support all the weight. I also need to figure out what size tires would be best. I'm thinking anywhere from 10-15" with a single front fork and tire. Also what would be the best way to set up a brake as well? Sorry lots of questions but i wanna make this thing right if I'm gonna spend the money on it.
