It's crawdad, crayfish, mud-bug season here. .....when you can get them live at the grocery stores. .....

So I just cooked some up....and they weren't that good....

So I'm looking for some advice to make them better.....

I think the first mistake I made was using sea salt to give them a bath.....in the past they would have puked up the water....this time the water looked the same....and when I sucked the heads they tasted a bit off.....

Also- these weren't that bad....but the heads were strong and the tails a bit bland....so any help on cooking instructions would be appreciated. ...

Finally- you don'thave to be Cajun to reply....just a mud-bug aficionado. ...

Disclaimer: I don't know how to cook crawdads, but have cooked crab. They turned out best when I steamed them, not boiled. I added some old-bay seasoning to them as well. To reheat, threw in the oven and baked. Good luck! (your going to need all the luck you can get with my advice lol)

Well actually they came out pretty well. ....I just let them soak a little longer and they were pretty dadgum tasty......

However- there is always room for improvement. .....well not exactly. .....

I can't ever get around crawfish. ...without thinking about Bozo's Grocery in Pascagoula Mississippi. ....My ex's hometown and we took a trip there back in the 80's. What they can do with crawfish can only be compared with what Michelangelo could do with paint.....So the bar is set very high. ....

I just Googled them up....and I'm not sure if they are still in business or not....but they were still getting rave reviews on their seafood last year......

I can't remember exactly. ...but after eating there....I asked to speak to the owner and set up a deal for a bulk purchase. Now it was either 30 or 50lbs.- that part is fuzzy......Whether he got the ice or I did....fuzzy. ....but we set it up so that the morning I was headed back for Ft. Worth. ..they were cooked and iced down and ready to go. .....We agreed on $1 a pound and man.....did I eat good for awhile. ......

As far as the way they did it.....55 gal drums with their own secret blend of spices and vegetables. .....They had like a 5'×10' stainless steel table they would dump them on and you would just fight the next guy to get the big ones first......:lolgoku:
