i'd get the biggest 24v motors you can. I'm looking at a similar setup. THe batteries seem to be the most expensive part. I've seen some go carts that use 2 500w scooter motors and they zip w/ one person. i seriously doubt youll get good results w/ the 350 watters w/ two people plus the weight...

Could you wire two of the three through a switch that has something like forward and reverse? set it up so rev would be wired parallel for longer battery life, but you could switch it to forward and itd be series for the juice boost. (I reserve the right to have series and parallel bass-ackwards.)
